Combine coffee, coconut sugar, and monkfruit sweetener in a small saucepan and bring to a boil. Boil for 15 minutes, or until liquid reduces by almost 3/4.
Turn off heat and stir in vanilla.
Cool completely before using as coffee syrup. Store in the fridge up to 1 week.
