Preheat your oven to 350 degrees Fahrenheit. -
To a small bowl, add your pumpkin and coffee and mix. Add in the sugar, oat flour, and melted coconut oil and mix until even. -
If the dough is too liquidy, add more flour. If it’s too dry, add more coffee or a splash or dairy free milk. -
Roll into a ball and top with chocolate chips. -
