Preheat your oven to 375 degrees Fahrenheit. -
Peel your apples and chop them into small pieces. Place in a bowl and add the cinnamon and lemon juice. Set aside. -
In another bowl, mix together the cinnamon and sugar. Set aside. -
In a large mixing bowl whisk the eggs, almond milk, coffee, vanilla, and sugar. Fold in the dry ingredients until evenly mixed. -
In a small greased loaf pan, add half the batter. Top with the apple mixture and the cinnamon sugar. Add the rest of the batter on top with the remaining apples and cinnamon sugar. -
Bake for 43-45 minutes. Let cool and enjoy! |
